Cake lovers will soon be able to get their hands on homemade sweet treats at a new "cakery" which will be opening in a town's high street.

Jessica Doe, owner of the mobile baking business Puddin, said it's a "dream come true" to be opening her very own shop in her hometown of Thetford.

The 26-year-old will be taking over a unit in the Shambles, in Market Place, with hopes of officially opening at the start of February. 

It comes after a successful few years for Ms Doe who launched her dessert business during the coronavirus pandemic.

And it became so popular that in July last year, she left her full-time job as a chef to pursue it full-time.

Ms Doe said: "It has been a leap of faith, but I really think we have something good.

"My dream had always been to open a shop, but I didn't think it would be so quickly.

"The Shambles is an amazing location and when I went to see the unit, it was perfect."

Initially, Ms Doe said she will be serving up her usual cakes and bakes, as well as tea and coffee.

Once she is settled in, she hopes to make the most of her cheffing background to introduce savoury options such as homemade toasties, sandwiches and sausage rolls.

Ms Doe said there will be some seating, but this will be limited.

Before the opening, the shop - which will be named Puddin - will undergo some renovation work to turn it into a "modern" and "groovy" space.

But Ms Doe said she wouldn't be able to make her dream a reality without the support she has received.

"I just want to thank all of my customers," Ms Doe added.

"Everyone is really excited for me. Thetford is such a tight-knit community. It's lovely to have that support.

"The town council (who own the Shambles) and Breckland Council have also been a great help.

"This wouldn't be possible without them."

Ms Doe will not be operating from her horse box in January while she focuses on getting the shop ready for opening.
