A Norfolk pub chef has been recognised as one of the best in Britain after his dessert wowed sweet-toothed judges.

Andy Snowling, head chef at the Hunny Bell in Hunworth, near Holt, won dessert pub chef of the year at the Great British Pub Food Awards 2011.

Mr Snowling, who picked up his award on Thursday evening, won for trio of chocolate mousse, hot chocolate fondant and brownie.

After an initial 'paper' judging, He took part in a cook off against other finalists from pubs all over the country, where he had to prepare and cook his dessert in 75 minutes, and create another dish from a mystery box of ingredients.

Martin Bates, chief executive of the Craft Guild of Chefs and one of the competition judges, said: 'Choosing a winner from this short-list of skilled chefs wasn't easy, but Andy won the day with this delicious and beautifully presented dessert. Andy is a truly talented chef and thoroughly deserves this national award.'

Jo Bruce, deputy editor of pub industry magazine Morning Advertiser, which runs the awards, said: 'Our industry has been badly hit by the recession but the best licensees are adapting and innovating to survive.

'Offering food as well as drink is a proven recipe for success for many pubs and the future looks bright for them and for the chefs who are able to produce the tasty, value for money meals demanded by customers.'

Mr Snowling has been head chef at The Hunny Bell for 18 months.
