The 26-year-old died the day after being assaulted in the Morrisons store on Norwich Road on Monday, and two men accused of his murder have been remanded into custody.

Today his family have spoken of their grief at the loss of a 'warm and caring soul'.

'Words cannot describe the overwhelming gut-wrenching sadness and anger we are all feeling at the loss of Nicholas,' said his mum, Sue Rogers.

'We had a strong bond and while Nick didn't always get things right, he so desperately wanted to change his life for the better.

'I hope that by donating your organs, the lives of others have been saved and you will live on with them. We hope they all lead a full life, something which was cruelly taken so suddenly from you. Night night, my beautiful special boy.'

Nick's brother and sister, Cameron and Hope Steadman, also paid tribute to their 'big bro'.

'I miss you so much, wish you were still here,' said Cameron. 'I regret not saying how much I appreciated and loved you. It's so sad to see you go at a time you started to take the reins on your life and steer on a good course. I'll continue to remember the good times and make you proud.'

Hope said: 'It's tough to know you won't be around, to never see me get married, be an uncle and see my children grow up. It's hard to believe it's real – I still expect to see you come walking in the house and ask if I'm alright. Love and miss you so much, please watch over me and keep me safe.'

Nick's stepfather Andrew Steadman, said words could not described the 'pain and heartbreak' the family were going through.

He added: 'Behind the typical young lad bravado, Nick was a warm and caring soul and would always help others where and when he could. His loss will leave a huge void in our lives.'

The family also paid tribute to members of the public and Morrisons staff who rushed to Nick's aid on Monday night. They also thanked paramedics, staff in A&E and the critical care unit at the Norfolk and Norwich University Hospital.

Lee Monk, 19 and of Silfield Road and his uncle John Monk, 43, and of Albini Way, both in Wymondham, are accused of his murder. Both men are also accused of affray.

Both men appeared at Norwich Magistrates Court yesterday and again at Norwich Crown Court today (21 July) where they were further remanded in custody until their next court appearance on 18 August for a pre-trial and preparation hearing.
