A Norwich triathlete is hoping to change the meaning of fast food as she gets set to deliver freshly-made lunches and homemade tea-time treats to city offices.

Catherine Bayham’s new venture Eco Lunch will officially get under way from Monday.

The environmentally-friendly business will see the 37-year-old pedal bespoke lunchtime orders to offices in and around the city.

Single mum-of-one Miss Bayham, who is a member of Norwich-based triathlon club Tri-Anglia, will prepare her range of sandwiches, cakes and dishes daily in the kitchen at the Reindeer pub on Dereham Road, Norwich, and will deliver within a five mile radius of the pub.

Her menu will also include a weekly special ready-meal with both a meat and vegetarian option. The first of which will be chilli con carne and vegetarian spicy bean burgers on a bed of kale and whole grain rice with feta cheese and cherry tomatoes.

Former cinema projectionist Miss Bayham, who lives off Magdalen Road, Norwich, said she came up with the idea after having her son Milo. She said the business has been three years in the making.

“Because I’m a single mum, I needed to find something that was going to fit in with child care and I don’t drive so I started to think of ways I could use that to my advantage.

“I love cooking and feeding people and combined with my love of being outdoors, the idea for Eco Lunch was born,” she said.

“I’m really excited about it. It’s been three years in the planning and the last six months have been a real slog but now it feels amazing to be able to get to the point of making food that people want to buy. It’s a great feeling.”

Her menu offers a range of sandwiches, titled as either simple, smart or swanky, and a variety of salads and wraps plus the weekly specials which workers will be able to re-heat in their office microwaves.

There is also a selection of cakes and biscuits and a range of fresh fruit and superfood smoothies.

Miss Bayham, who bought her bike on eBay, said her passion for cooking was influenced by her Singaporean mum and that she plans to bring a range of flavours to her menus.

She said she can also design bespoke menus for individuals, whether they are a runner training for a marathon or someone following a specific diet.

“I want to bring in food I knew from my childhood and it’d be nice if people were excited by it,” said Miss Bayham.

“A lot of people’s lunches are based on convenience but it’s about showing how you can have nutritious and healthy food as well as convenient, rather than nasty, sweaty sandwiches.”

Orders must be made by 3pm for the following day. The website will go live within the next few weeks but in the meantime, people can place an order by sending a message on the eco lunch - Norwich Facebook page or emailing eco_lunch1@yahoo.co.uk.

All orders will need a name and location, a contact phone number and order details. The full menu is available on the Facebook page and there are ‘meal deal’ options.

Miss Bayham will collect cash payment on delivery.

  • I bet the food hygiene people will be knocking on her door very soon and looking at her ‘business’ very closely, as she seems to be breaking just about every rule in the book
